Writing about pheasant hunting has made me think about all the ways I enjoy cooking it. I will add more as time permits.
Pheasant strips
Pheasant breast cut into strips Flour Seasoning 2 Eggs Oil
Cut your pheasant breast into strips. Make sure you watch for any shot in the meat. Take your flour and put it in a gallon ziplock bag. Add whatever seasoning you want to the flour. I usually add some salt, pepper, cayenne pepper, and onion pepper. Use what you like. Beat up the two eggs and place in a bowl. Quickly dip the pheasant strips into the egg, and then drop them into the bag of seasoned flour. I usually put a small handful in there, then shake the bag, while holding it closed. Pull out the pieces, and shake off the extra flour. Drop them in a pot of 370* oil and fry until GBD (Golden, Brown, Delicious). Remove from the oil and drain well on a rack, or paper towel.
"Secret" dipping sauce
This one is simple, and tastes great.
Miracle whip, or your favorite mayo substitute Yellow mustard Honey Sugar
No measurements given, or used. Drop some of the dressing into a bowl. Give it a shot of the yellow mustard. Add a glob of honey, and then a little sugar. Mix it up until the sugar dissolves. Take a taste, and adjust it to your liking. Some like a sweeter sauce, others like more mustard. Its up to you, but it is definitely good stuff.

Squeeze some of that in there...splash some of this...a blob of that other stuff...and BOOM...mix and its done. Yeah buddy.
